Router/Firewall
Aaron should do either a FreeBSD firewall, using either m0n0wall or pfSense, if he wants it done real fast and easily administered through a web interface, or buckle down and learn how to set up, and administer, OpenBSD's Packet Filter (pf) firewall and do an OpenBSD firewall.
I think OpenBSD is THE OS for network-perimeter security.

You should make a this box into a router and maybe even add a cheap wireless card hence an Wireless AP. I guess you could even add Asterisk as well.

hey, I know it's not Linux, but based on BSD, but it's a tiny app and makes a nice little Network applicance to grab all those tiny drives together and make a handy box.

Not sure if the box will be up to it, but... MythTV has been the most fun I've had with open source software. And it's a worthy challenge! :> I've run it under Fedora but prefer Gentoo. All IMHO.
